Whole Sun-Dried Hatch Red Chile for Traditional Recipes
Dry Hatch red chile is commonly used to prepare red chile sauce for enchiladas, posole, huevos rancheros, tamales, chile con carne, burritos, and many other traditional New Mexican dishes. The finished sauce is also delicious served with a bowl of pinto beans or spooned over eggs, potatoes, rice, and roasted vegetables.
The rich red chile flavor pairs well with beef, pork, chicken, and fish. Use the pods to make a smooth cooking sauce, create a flavorful marinade, or add extra spice and depth to soups, stews, beans, and casseroles. The amount of chile used can be adjusted according to the desired flavor and heat level.
To prepare the pods for sauce, rinse them thoroughly, remove the stems, and soften them by boiling or soaking them in hot water. Once softened, blend the chile with water or broth and your preferred seasonings. Strain the sauce when a smoother consistency is desired.

Orders ship through USPS or FedEx, depending on the package size and the most practical available shipping rate. Smaller orders normally ship through USPS. Shipping and handling are typically included for orders within the United States.
In some cases, especially for East Coast destinations where shipping costs are higher than expected, an additional shipping charge may be required. Customers will be contacted by text message or email after ordering when an additional charge applies. The order may be cancelled for a full refund when the customer does not wish to pay the additional charge and the package has not already shipped.
Additional shipping charges apply to Alaska and Hawaii. The newly sun-dried Hatch chile crop is expected to become available during the first week of December, so seasonal customers should check the product page for current availability.
